Asian salmon salad

  • 300g Salmon fillet
  • 2 Tablespoons fish sauce
  • 1 Teaspoon caster sugar or honey
  • 3 shallots finely chopped
  • 1 Tablespoon honey roasted peanuts chopped
  • 1 Garlic clove finely chopped
  • To garnish - mint and coriander leaves
  • 2 Teaspoons of salmon roe
  • 1 Teaspoon of sesame seed oil
  • Dressing
  • Juice of 2 limes
  • 1 Tablespoon fish sauce
  • 1 Teaspoon palm sugar or caster sugar or honey
  • A pinch of chilli powder
  • Place the salmon in a bowl with the fish sauce and caster sugar or honey.
  • Mix the salad dressing.
  • Heat a little sesame seed oil in a frying pan and fry the garlic and shallots until opaque. Add the salmon and fry until it's cooked on both sides.
  • Place the salmon on a plate, cover with the dressing, then garnish with the leaves and salmon roe.
