Asian squid salad

  • 300g Squid, cleaned
  • 3 shallots finely chopped
  • 2 Kaffir leaves finely chopped
  • 1 Lemongrass stalk, tough outer leaves removed and inside finely chopped
  • 2 Small thai green chillies seeds removed and finely chopped
  • 1 Teaspoon of caster sugar or honey
  • Juice of 2 limes
  • 1 Tablespoon of fish sauce
  • 1 Teaspoon of finely chopped coriander
  • Coriander, mint and Thai basil to garnish
  • Slice the squid and blanche in boiling salt water until slightly opaque. Drain and cool.
  • Toss the squid with the shallots, kaffir and lemon grass.
  • Mix the chopped coriander with the green chilli, caster sugar or honey, lime juice and fish sauce.
  • Pour the dressing over the squid and garnish with leaves.
