Beetroot, pink grapefruit and feta salad

  • 8 Baby beetroot cooked and cubed
  • 1 Pink grapefruit, the flesh taken out of the segments
  • 4 Sticks of celery (from the centre of the celery) sliced
  • 1 Cox's apple cubed
  • 1 Pack of good feta cheese cubed
  • Basil leaves torn
  • Dressing
  • 1 - 2 Tablespoons Greek yoghurt
  • Juice of a lemon
  • 1 Teaspoon honey
  • or
  • 2 Tablespoons hazelnut oil
  • Juice of a lemon
  • 1 Dessert spoon of balsamic vinegar
  • Put the salad ingredients together on a plate but don't mix or they will all turn pink!
  • Serve with the dressing and torn basil leaves
