Broad Bean, Feta & Date Salad

  • 1/2 cup of dried or semi-dried dates
  • 1/2 cup of chopped best quality feta cheese
  • 1/2 cup of broad beans, boiled for 1 minute then outer skins removed
  • 1/2 cup of small vine or plum tomatoes, quartered
  • 1 tablespoon of finely chopped spring onions
  • 1 large handful of baby rocket leaves
  • 1 handful of basil leaves
  • 1 handful of baby lettuce leaves
  • The Dressing:
  • 1 tablespoon of best cider vinegar
  • 1 tablespoon of runny honey
  • 2 tablespoons of best olive oil
  • Mix the dressing well in a small jug
  • If the dates are dried add to the dressing and leave to soak for 10 minutes
  • Place the lettuce & rocket leaves at the bottom of a bowl or divide onto 4 starter plates
  • Mix all the other ingredients together with the dressing then spoon over the leaves
  • Season with a touch of salt & pepper and serve immediately
