Caesar salad

  • Cos and rocket lettuce
  • Cooked chicken shredded (optional)
  • Dressing
  • 1 small pot of natural yoghurt
  • 2 tablespoons of olive oil
  • 2 cloves of garlic very finely chopped or crushed
  • Cup of finely grated Parmesan cheese (save a little to sprinkle over the salad later)
  • 2 teaspoons of Worcestershire sauce
  • 1 teaspoon of horseradish
  • Juice of one lemon
  • Anchovies in olive oil (add about 3 anchovies finely sliced with the oil from the tin) add the rest to the salad later. (optional)
  • Salt and pepper to taste
  • I like to make it extra healthy by adding lightly toasted mixed seeds sprinkled on top.
  • Other options that can be added are sliced avocado sprinked with lemon juice and finely sliced spring onion.
  • Put the cos and rocket in a serving bowl
  • Sprinkle over the chicken if using.
  • Mix the dressing ingredients together.
  • Pour the dressing over the salad.
  • Sprinkle with the remaining parmesan.
  • Add the anchovies if using.
  • Finally sprinkle over the lightly toasted mixed seeds if using.
