Ceviche

  • 2 sea bass, sea bream or red mullet fillets - as fresh as possible, chopped or sliced.
  • 8 limes juiced
  • 10 best quality cherry tomatoes, pips and core removed, chopped
  • 1 small red onion very finely chopped
  • 1 handful of fresh mint and coriander, finely chopped
  • 1 red or green chilli, finely chopped
  • 1/2 Mango chopped
  • 1 Lime segmented
  • 1 Pink grapefruit segmented
  • 2 Lemons segmented
  • 1 Avocado finely chopped
  • Dill to garnish
  • Mix the fish in the lime juice and leave for at least 15 minutes to 'cook'. Longer if you wish
  • Add the other ingredients and mix together
  • Other ingredients that you can add if you wish:
  • The chopped flesh of oranges, cooked peeled prawns cut into chunks and sliced squid marinated in lime juice.
  • Garnish with finely chopped dill
