Chicken and Asparagus Stir Fry

  • Serves 4
  • 2 garlic cloves very finely chopped
  • 2 large green chillies finely sliced
  • 2 lemongrass stalks, white inside finely sliced
  • 1/2 teaspoon of numeric
  • 1 pinch of sea salt
  • 4 skinless organic chicken breasts diced into 1
  • 2 tablespoons of groundnut oil
  • 12 asparagus stalks, halved and cut into batons
  • 1 tablespoon fish sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon of brown sugar or honey
  • coriander and chopped spring onion to garnish
  • Mix the garlic, lemongrass, green chillies, turmeric and salt together in a mortar and crush and grind with the pestle (alternatively blend in a liquidiser) then add the chicken and leave to marinate
  • Mix the fish sauce, lemon and lime juice with the sugar or honey
  • Heat the olive oil in a wok and stir fry the chicken for 2-3 minutes. (This can be done in batches)
  • Return all the chicken to the wok, add the asparagus and stir fry for a further 2 minutes
  • Add the citrus juice, fish sauce and sugar/honey mix
  • Serve and garnish with spring onion and corriander
