Chicken Tortillas

  • 1 pack of tortillas
  • 500g boneless skinless chicken breast chopped into strips
  • 1 red and 1 yellow pepper cut into strips
  • 2 red onions sliced
  • 2 tablespoons of olive oil
  • Marinade
  • 2 tablespoons of olive oil
  • 1 white onion finely sliced
  • 1 clove of garlic finely chopped
  • 1/2 cup of fresh orange juice
  • 2 tablespoons of jalapeƱo peppers chopped
  • 1 tablespoon chipotle paste
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of chopped coriander
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of brown sugar
  • guacamole
  • 1 avocado
  • 2 tablespoons of creme fraiche
  • 1 clove of garlic chopped
  • juice of 1 lemon
  • To serve
  • Grated mature cheddar cheese
  • Iceberg lettuce
  • Put the marinade ingredients in a bowl and add the chicken strips. Marinade for an hour or so.
  • Put the olive oil in a large saucepan and fry the red onions and peppers for a couple of minutes
  • Add the chicken with the marinade and continue to cook until the chicken in cooked through
  • Serve with
  • Guacamole, wiz the guacamole ingredients together in a food processor
  • Serve with warmed Tortillas, shredded Iceberg lettuce and grated cheese
