Crab cakes with sweet potato

  • 2-3 Sweet potatoes peeled and chopped (500g)
  • 200g Crab meat
  • 1 Pack of Panko bread crumbs
  • Olive oil
  • 1 Bag of rocket to serve
  • Dressing
  • 1 Cucumber finely chopped
  • 1 Pack of dill finely chopped
  • 1 Pack of small cherry tomatoes quartered
  • 1 Small handful of finely chopped fresh mint
  • 1 Shallot finely chopped
  • 1 Chilli finely chopped
  • 2 Tablespoons Chinese rice vinegar
  • 2 Tablespoons lemon juice
  • 1 Tablespoon of honey or teaspoon of caster sugar
  • Bake the sweet potato in the oven with some olive oil until soft. Leave to cool slightly then mash. Mix the crab with the mashed sweet potato.
  • Make the mix into desired crab cake size and then roll in Panko bread crumbs.
  • Fry the cakes in olive oil. Bake in the oven for 15 minutes.
  • Mix together the sauce ingredients.
  • Place the rocket on a plate. Place the crab cake in the middle and serve with the sauce.
