Feta and spinach filo rolls

  • 1 pack of filo pastry
  • 200g feta cheese
  • 1 large colander full of baby spinach leaves (to be lightly steamed)
  • Redcurrant jelly to taste
  • Butter
  • Rocket lettuce (optional)
  • Lay out two pieces of filo pastry and lightly brush each with melted butter place on top of each other.
  • Place strips of feta cheese in a line across the width of the filo, cover each layer with lightly steamed spinach and small dollops of redcurrant jelly.
  • Roll the pastry around the feta mix. Vey lightly butter and wrap two more layers around the roll.
  • Make as many rolls as the ingredients permit.
  • Place on a lightly buttered baking tray and bake at 160C for 7-10 minutes until lightly browned.
  • Leave to cool for a few minutes, slice and serve. Perhaps on a bed of rocket.
