Filo parcels with squash, goats cheese and cranberries

  • 50g melted butter
  • 1 Pack of filo pastry
  • 1 Small butternut squash finely diced
  • 1 Red onion finely chopped
  • Olive oil
  • 1 Pack of soft goat cheese
  • 1 Small pot of cranberry jam
  • Place the butternut squash and onion in an oven proof dish.
  • Drizzel with olive oil and bake in the oven for 30 minutes until soft.
  • Leave to cool.
  • Lightly butter a small muffin or fairy cake tin.
  • Cut the filo pastry into 12 cm squares.
  • Lay a square over the each of the lightly butter indents in the tin and press down.
  • Lightly butter each square and press another layer of filo pastry on top.
  • Place a teaspoon of the butternut squash mixture in each filo mould.
  • Place a teaspoon full of goat's cheese on top.
  • Place a teaspoon of cranberries on top.
  • Pull the edges of the filo over the mixture and lightly butter it together.
  • Bake in the oven for 15 minutes until lightly brown.
