meringue nests

  • 400g caster sugar
  • 6 free range egg whites
  • 1 teaspoon of rosewater
  • Blue berries
  • Raspberries
  • Whipped cream
  • Put the sugar on baking parchment, in the oven on a tray at 200 degrees C for 4-5 minutes, do not let it turn brown or runny at the edges.
  • Whip the egg whites
  • Whilst the egg whites are still whipping, gently pour the hot sugar into the mix. Add the rosewater and continue to mix for 3 minutes.
  • Drop the oven temperature to 110 C
  • Pipe the meringue into small nest on another piece of baking paper.
  • Bake in the oven for 1.5 hours or until crisp and dry.
  • Cool the meringues. Put a spoon of whipped cream in the base of each and decorate with fruit.
