Monkfish curry

  • 3 shallots finely diced
  • 2 Kaffir leaves finely shredded
  • 1 Green chilli finely sliced
  • 2 teaspoons of green curry paste
  • 1 can of coconut milk
  • 1 tablespoon of fish sauce
  • 1 teaspoon brown sugar or honey
  • Monkfish (diced)
  • Juice of 1 lemon & 1 lime
  • Gently fry the shallots, Kaffir leaf and chilli until the shallot is translucent, then add the curry paste
  • Add the coconut milk and continue to simmer and stir until combined.
  • Add the fish sauce and sugar or honey.
  • Add the monkfish.
  • Once the monkfish is lightly cooked add the lemon and lime juice. Warm through and serve.
