Pork chops with apple and ginger

  • 4 Pork chops
  • Olive oil
  • 2 Red onions finely sliced
  • 1 Large cooking apple
  • 1 Tablespoon of Dijon mustard
  • 2 Tablepoons of cider vinegar
  • 1 Tablespoon of soft brown sugar
  • Finely chopped ginger
  • Rosemary very finely chopped
  • Thyme
  • Juice of 2 lemons
  • Fry the pork chops on both sides in a little olive oil.
  • Transfer to an oven proof dish.
  • Fry the red onions in a little olive oil.
  • Peel, core and slice the apple, mix with the lemon juice then add to the pan with the onions.
  • Add the other ingredients and fry for a further 3 minutes.
  • Pour the sauce over the chops, cover with foil and bake in the oven for 1 1/2 hours at 160.
