Pork with Chilli

  • 2 Pork fillets
  • 2 Tablespoons of soya sauce
  • 3 Tablespoons of miring rice wine
  • 2 Tablespoons of hoisin sauce
  • 2 Dessertspoons of sesame seed oil
  • 4 Red chillies finely sliced (seeds removed)
  • 2 Cloves of garlic finely chopped
  • 4 Shallots finely chopped
  • 2 Tablespoons of honey
  • 1 Tin of water chestnuts chopped
  • 10 Spring onions chopped
  • 1 or 2 Tablespoons of honey roast peanuts chopped
  • Coriander to garnish
  • Slice the pork thinly and mix with the soya sauce, mirin, hoisin sauce, half the sesame seed oil and honey. Leave to marinate for about 1 hour.
  • Pull the pork out of the marinade and fry in batches for a couple of minutes until coloured. Put it back in the rest of the marinade and stir again.
  • Put the rest of the sesame seed oil in a large frying pan, then gently fry the red chillies, garlic and shallots.
  • When they are coloured add the pork and marinade, cook gently for about 10 minutes.
  • Add the water chestnuts, half the honey roast peanuts and spring onions and cook for a further 3-5 minutes.
  • Remove from the heat, sprinkle the rest of the honey roast peanuts and coriander over and serve.
