Rhubarb Relish

  • 300g young rhubarb chopped
  • 1 teaspoon finely chopped ginger
  • 1 tablespoon of runny honey
  • 2 shallots finely diced
  • 1/2 a red chilli very finely sliced
  • 1 teaspoon olive oil
  • sprinkle of ground cloves
  • 1 tablespoon of the finest balsamic vinegar
  • 2 pickled walnuts chopped (optional)
  • Put the rhubarb, finely chopped ginger and honey into an oven proof dish and bake for 10 minutes until soft.
  • Put the chopped shallots and olive oil into a pan and cook gently until turning opaque and soft. Add the chilli and cook for another minute or two.
  • Add the balsamic vinegar, a sprinkling of cloves and the pickled walnuts (if using) and cook for another two minutes
  • Combine all the ingredients and stir thoroughly
