Salmon and soba noodles

  • 6 pieces of top quality salmon
  • 250g dried soba noodles
  • 600g broccoli
  • 2 tablespoons of toasted pine nuts
  • 3/4 tablespoons of olive oil
  • 50g miso paste
  • 4 tablespoons miring
  • 1 tablespoon finely chopped fresh ginger
  • 2 cloves of garlic finely chopped
  • 2 red chillies finely chopped
  • Basil leaves to garnish
  • Put the pine nuts, miso paste, mirin, ginger and garlic and some olive oil into a blender and blend, add more olive oil as necessary to get the right consistency. Add the chillies and quickly mix aga
  • Cut the broccoli into florets and steam for 4 minutes, until cooked (do not over cook)
  • Blend most of the broccoli into the mixture, but keep some florets to garnish with.
  • Cook the soda noodles as directed on the pack - about 4 minutes in water.
  • Put the salmon in a frying pan with olive oil or steam until cooked through.
  • Put the drained soda noodles in a serving bowl or on separate plates, add the pesto style mix on top of the noodles.
  • Sprinkle with basil leaves and the broccoli florets.
