Salmon & Mango Salad

  • Serves 4
  • 4 Boneless salmon fillets
  • 1 Tablespoon of olive oil
  • Dressing
  • 2 Tablespoons of caster sugar or honey
  • 4 Tablespoons of lime juice
  • 4 Tablespoons of fish sauce
  • Salad
  • 1 Ripe mango cut into small chunks
  • 1 Red chilli deseeded and finely sliced
  • 1 Small shallot finely chopped
  • 1 Handful of rocket leaves
  • 1 Handful of coriander leaves
  • 1 Handful of basil leaves
  • Garnish
  • A few mint leaves
  • 1 Tablespoon of salmon roe
  • Fry the salmon in the olive oil until just cooked through.
  • Mix together the dressing.
  • Place the leaves on the plate, put the salmon and dressing on top and then garnish.
