Singapore Noodles

  • 4 Shallots finely chopped
  • 1 green and 1 red chilli finely sliced
  • 2 cloves of garlic finely chopped
  • 1 cm of ginger finely chopped
  • 1 pack of rice vermicelli noodles
  • 1 teaspoon of curry powder
  • 1 teaspoon Worcestershire sauce
  • 2 eggs lightly beaten
  • 1 tablespoon of soy sauce
  • 1 teaspoon honey
  • Juice of one lime
  • Spring onion chopped
  • Small prawns
  • Beansprouts
  • 1 tablespoon groundnut oil
  • Put the groundnut oil in a frying pan, lightly fry the shallots, garlic, ginger and chillies.
  • Mix the egg, curry powder, soya sauce, honey and Worcestershire sauce together.
  • Put the noodles in hot water for a minute and then drain.
  • Add the noodles to the pan and the prawns.
  • When heated through add the egg mixture.
  • Finally add the spring onions, bean sprouts and lime juice and serve.
