Spicy lentils

  • 100g Puy lentils
  • 2 teaspoons finely chopped ginger
  • 1/2 red onion finely chopped
  • 1 Green and 1 red chilli finely sliced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon light soya sauce
  • 1/2 tablespoon tomato ketchup
  • 1 tablespoon sweet child sauce
  • 1 tablespoon olive oil
  • Follow instructions for lentils on the packet, they may need to be soaked for 3-4 hours.
  • Wash the lentils and then place them in a pan with plenty of water, bring the water to the boil and cook the lentils for 15 minutes.
  • Drain the lentils and since under cold water.
  • Put the ginger, chilli, onion, cumin, coriander, balsamic vinegar and soya sauce in a pan and simmer gently with the lid on for five minutes.
  • Remove from the heat and add the ketchup, sweet chili sauce and olive oil.
  • Pour the lentils into the pan and mix.
  • Leave to cool.
