Steak salad

  • 2 Tablespoons of olive oil
  • Best quality fillet or sirloin
  • 1 Aubergine sliced
  • 1 Red pepper and 1 yellow pepper sliced
  • 1 Courgette sliced
  • 1 Table spoon of pine nuts lightly toasted
  • 1 Pack of feta cheese chopped
  • 1 Tablespoon of finest balsamic vinegar
  • 2 Red onions finely sliced
  • Basil leaves
  • Rocket leaves
  • Dressing
  • 2 Tablespoons of the finest Olive oil
  • 1 Tablespoon of best Cider vinegar
  • 1 Tablespoon of honey
  • Fry the aubergine, peppers and courgette in a little olive oil until soft.
  • Gently fry the red onion in olive oil. Add balsamic vinegar and caramelise.
  • Cook the steak for as long as your preference. Leave to stand for whilst you compile the salad.
  • Put the aubergine, pepper and courgette on the plate .
  • Cover with a layer of rocket.
  • Slice the steak and put on top.
  • Add the feta, caramelised onion, pine nuts and basil.
  • Pour over the dressing, once you have mixed the ingredients together and serve.
